Carbon dating relies on the PERCENTAGE of Carbon14 in the atmosphere at the time the organism lived. The organism incorporates the C14 into itself as long as it lives at the SAME PERCENTAGE. When the organism dies, it stops adding C14.
Therefore, you can take the percentage of C14 remaining in a formerly living organic item and determine its age.

Carbon dating relies on the amount of carbon in an object, and dated from that, this is inaccurate as the amount of carbon in the atmosphere has not always been a constant, nuclear tests increase the amount of carbon in the atmosphere dramatically.
